If you like seafood and spicy food in general, you're in luck. You can spend all your time happily eating nothing but searingly hot (spicy) fish day in and out here, whether you choose to eat in the best restaurants around (generally found at hotels) or at beachfront open-air shacks. But since Goa has such a huge tourists culture, food can be prepared to your liking - simply grilled or fried.
Just make sure you know what you're eating and how spicy the preparation before you order. Goa food is typically big on flavor, whether it's chili, tamarind, or coconut that plays a dominant role in the dishes you order. And make sure you order your meat (pork or beef) cooked through, and only in the better-known larger restaurants, not in the beach shacks.
Seafood is safe everywhere as long as its fresh. If you're vegetarian, you'll get by fine, but vegetables are not as plentiful in the Goan diet as are fish, seafood, and meat.
