If you have 3 days

If you have only a few days in Goa, you might well spend them all swimming in the warm waters of the Arabian Sea and eating delicious fresh fish. Base yourself in the Bardez district in the north and spend your first day on Baga Beach.
Drive the next day to Old Goa for a few hours of sightseeing or take a longer, tourist-office bus tour of either south or north Goa.
Stretch out on Calangute Beach on Day 3.

If you have 5 days

Start your trip in the north. Spend a day and night at Baga Beach or the isolated, ruggedly beautiful Arambol Beach even farther north.
The next day, explore Panaji and Old Goa, and in the evening take a boat ride from Panaji.
On your third day, hit Colva Beach or Sinquerim Beach and linger to watch the sun set.
The fourth day, if you're up for more traveling, take a taxi down the coast to Palolem Beach, another isolated and beautiful stretch of sand. Spend your time on all of these beaches, swimming and exploring: walks away from the designated swimming areas are both enchanting and - a rare blessing in India-sometimes solitary.
Taxi back to the Panaji airport or to the Madgaon railway station to leave Goa on your fifth day (no matter where you're going, leave up to an hour for the taxi ride).

If you have 7 days

Start your trip in the north. Spend a day and night at Sinquerim Beach, Baga Beach, or the isolated, ruggedly beautiful Arambol Beach.
The next day, explore Panaji and Old Goa, and in the evening take a boat cruise on the river Mandovi from Panaji.
On your third day (especially if this is a Wednesday), spend the morning on Anjuna Beach, wander through the flea market in the afternoon, and linger to watch the sun set at the Shore Bar.
The next day, laze around on Calangute Beach, get your fill of seafood for lunch, and check out the nightlife.
On Day 5, take a taxi or a day tour to the temples at Ponda or to Dudhsagar Falls.
On Day 6, spend the morning touring the villages of Loutolim and Chandor, lunch at Raia, and retire to one of the beaches of the south (Colva, Benaulim, or Varca) for a relaxed evening.
On your last day, take a taxi down the coast to Palolem Beach, an isolated and beautiful stretch of sand. Finally, get a taxi back to Panaji or Madgaon to leave Goa.

Goa is a small state, so everywhere is within a short drive of everywhere else and taxis are affordable, even between Panaji and Madgaon. It's a leisurely, pleasure-oriented place, best seen in a state of relaxation.

Try not to hop from hotel to hotel, unless you're touring the entire coast. Just find a hotel you like, preferably on a beach, and make day trips..
